PLEASE EXCUSE THE INTERRUPTION FOR THE FOLLOWING PUBLIC SERVICE ANNOUNCEMENT: It’s Christmas! I am so seriously excited. Hot cocoa. Sweaters. Carols. Lights. I love every single thing about Christmas except one… Eating Healthy. Eating healthy is SO much easier in the summer. Am I the only one who feels this way? Who wants to eat salads or grilled chicken when it’s cold outside? It’s Winter! It’s cold! I want warm rolls and chicken pot pie and mashed potatoes. It’s been my struggle every single year.
But you know what? Not this year. This year I’ve found a secret weapon that make me feel super festive AND healthy. Soup.
Soup is a win-win-win. It totally puts me in the Christmas spirit, it’s definitely a comfort food, and it’s super healthy (if you do it right). So to help you out, I’m sharing my go-to recipe for creamy butternut squash soup—super yummy and cozy and healthy.
BUTTERNUT SQUASH SOUP
½ butternut squash
¾ c chicken broth
1 T onion flakes or ½ tsp onion powder
¼ tsp nutmeg
¼ tsp garlic powder
pinch Italian seasoning
salt and pepper to taste
In a medium saucepan, boil 1-2 c water. Remove seeds from squash and cut into large chunks. Boil until soft. Drain water into a container and set aside. Using a fork and a knife, peel skin off the squash add to blender. Add remaining ingredients and blend until smooth. Add enough drained water to achieve desired consistency.
